Sea water has countless uses, just like we use salt in most of our dishes, we can also use sea water.
An example is Queso El Marí from Mas Marcè. Mas Marcè is a farm where they make all kinds of dairy products using ripollesa sheep’s milk. They have around 980 sheep that they feed on their own fields and pastures. The entire production process at Mas Marcè is organic, and among their products stand out recuit (fresh cheese), mató (another type of fresh cheese), and four varieties of cheese known for their originality and excellent quality of each piece.
One of their cheeses is El Marí cheese, made with raw milk from certified organic ripollesa sheep, coagulated with vegetable rennet (thistle rennet), with a soft texture and lightly salted with sea water from Cap de Creus.
